French Food: California Style Thursday, November 18, 2010 French food, made California style, may sound unusual, but with Chef Patrice as a teacher one can never go wrong. Raised in the mild climate of the French Riviera, Chef Patrice excels in the simplicity of Mediterranean cuisine with an emphasis on olive oil and fresh, in-season ingredients. Californian cuisine is also greatly influenced by the warm weather and coastal proximity that produces a bounty of sustainable harvests. These similarities allow food from California and the French Mediterranean to incorporate many parallels. In this class, Chef Patrice prepares regional, West Coast fish as the French would, and pairs it with farm fresh, Californian produce to give it local flavor.
